Ingredients

  • Cooked chicken (shredded or chopped) 🍗

  • Orzo pasta 🍝

  • Carrots (sliced) 🥕

  • Celery (chopped) 🌿

  • Onion (diced) 🧅

  • Garlic (minced) 🧄

  • Chicken broth

  • Olive oil 🫒

  • Lemon juice and zest 🍋

  • Fresh spinach or parsley 🌱

  • Thyme or Italian seasoning 🌿

  • Salt & pepper

Optional garnish:

  • Grated parmesan 🧀

  • Extra lemon wedges 🍋


Instructions

  • In a large pot, heat olive oil and sauté onion, garlic, carrots, and celery until soft.

  • Add chicken broth and bring to a gentle boil. Stir in orzo and simmer until pasta is tender.

  • Add the chicken, lemon juice and zest, spinach, herbs, salt, and pepper. Let it simmer briefly to combine.

  • Taste and adjust seasoning. Serve hot with parmesan and extra lemon if desired.

Notes

Use rotisserie chicken to save time. Add peas or chickpeas for more substance, or a dash of cream for richness. This soup is freezer-friendly and great for meal prep!
