Ingredients
-
2 flatbreads (store-bought naan, pita, or homemade)
-
1 tablespoon olive oil
-
1 garlic clove, minced
-
1 cup cooked chicken breast, sliced or shredded
-
1 cup cherry tomatoes, halved
-
1 cup fresh mozzarella (sliced or bocconcini)
-
Fresh basil leaves, torn or whole
-
Salt and freshly ground black pepper, to taste
-
Balsamic glaze (optional, for drizzling)
-
Crushed red pepper flakes (optional)
-
Pesto (optional, for drizzling)
Instructions
-
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
-
Place the flatbreads on the baking sheet. Brush each with olive oil and rub with the minced garlic.
-
Evenly distribute the chicken over each flatbread. Top with halved cherry tomatoes and slices of mozzarella.
-
Season lightly with salt and black pepper.
-
Bake for 8–10 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are golden.
-
Remove from the oven and top with fresh basil leaves.
-
Drizzle with balsamic glaze and, if desired, a touch of pesto or crushed red pepper flakes.
-
Slice and serve immediately while warm.
Notes
-
Use rotisserie chicken for a quick shortcut.
-
For extra flavor, grill the flatbread instead of baking.
-
Substitute mozzarella with burrata or goat cheese for a twist.
-
Add arugula or spinach after baking for an extra layer of freshness.
-
Homemade balsamic glaze: Simmer 1 cup balsamic vinegar with 2 tablespoons honey or brown sugar until thickened.
