Description

A delicious twist on the classic Caprese salad, this Chicken Caprese Flatbread is the perfect blend of juicy grilled chicken, fresh mozzarella, sweet tomatoes, and aromatic basil all layered on a crispy flatbread. It’s quick to prepare, easy to customize, and makes a vibrant dish for weeknights or entertaining.

  • 2 flatbreads (store-bought naan, pita, or homemade)

  • 1 tablespoon olive oil

  • 1 garlic clove, minced

  • 1 cup cooked chicken breast, sliced or shredded

  • 1 cup cherry tomatoes, halved

  • 1 cup fresh mozzarella (sliced or bocconcini)

  • Fresh basil leaves, torn or whole

  • Salt and freshly ground black pepper, to taste

  • Balsamic glaze (optional, for drizzling)

  • Crushed red pepper flakes (optional)

  • Pesto (optional, for drizzling)


Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Place the flatbreads on the baking sheet. Brush each with olive oil and rub with the minced garlic.

  • Evenly distribute the chicken over each flatbread. Top with halved cherry tomatoes and slices of mozzarella.

  • Season lightly with salt and black pepper.

  • Bake for 8–10 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are golden.

  • Remove from the oven and top with fresh basil leaves.

  • Drizzle with balsamic glaze and, if desired, a touch of pesto or crushed red pepper flakes.

  • Slice and serve immediately while warm.

  • Use rotisserie chicken for a quick shortcut.

  • For extra flavor, grill the flatbread instead of baking.

  • Substitute mozzarella with burrata or goat cheese for a twist.

  • Add arugula or spinach after baking for an extra layer of freshness.
