- 1 lb chicken breast or thighs (cut into bite-sized pieces)
- 3 cloves garlic (minced)
- 2 cups broccoli florets
- 1 cup mushrooms (sliced)
- 1/2 cup onion (diced)
- 2 tbsp olive oil or sesame oil
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp cornstarch (mixed with 2 tbsp water for thickening)
- 1 tbsp honey or brown sugar
- 1 tsp rice vinegar
- 1 tsp chili sauce (optional, for heat)
For Serving:
- 2 cups steamed white rice

- Heat 1 tablespoon of oil in a skillet or wok over medium-high heat. Add chicken and cook for 4-5 minutes until browned and fully cooked. Remove and set aside.
- Add the remaining oil to the skillet. Stir-fry garlic, onion, broccoli, and mushrooms for 5-6 minutes until tender-crisp.
- In a small bowl, mix soy sauce, honey, rice vinegar, chili sauce (if using), and the cornstarch slurry. Stir well.
- Return the chicken to the skillet. Pour the sauce over the chicken and vegetables. Stir and cook for 2-3 minutes until the sauce thickens and coats everything evenly.
- Serve the stir-fry over steamed rice and enjoy.
Notes
- Add water chestnuts or snap peas for extra crunch.
- Replace white rice with cauliflower rice for a low-carb option.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently before serving.
