  • 4 low-carb tortillas (8-inch size)

  • 1 cup shredded mozzarella cheese

  • 2432 slices of pepperoni (68 slices per tortilla)

  • ½ cup marinara sauce (low-sugar or keto-friendly)

  • 1 teaspoon Italian seasoning

  • 2 tablespoons grated Parmesan cheese

  • Olive oil or cooking spray


Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly brush or spray with olive oil.

  • Lay tortillas flat and spread a thin layer of marinara sauce, leaving ½ inch from edges.

  • Sprinkle mozzarella cheese evenly, then layer pepperoni slices.

  • Add Italian seasoning and Parmesan cheese.

  • Roll tortillas tightly into logs and place seam-side down on the baking sheet.

  • Bake for 10-12 minutes until cheese is melted and tortillas are golden.

 

  • Let cool for 1-2 minutes, slice each roll into 3-4 pieces, and serve with extra marinara sauce for dipping.
