Description

These cheesy meatloaf bites are the perfect mini version of a comfort food classic. With gooey cheese centers and a flavorful glaze, they make a fantastic appetizer, party snack, or even a fun family dinner option.


Ingredients

  • 1 ½ pounds ground beef (80/20)

  • 1 cup breadcrumbs (plain or Italian seasoned)

  • ½ cup whole milk

  • 1 large egg

  • 1 medium onion, finely diced

  • 2 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried Italian seasoning

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 cup shredded cheddar cheese (or mozzarella)

  • ½ cup ketchup (for glaze)

  • 2 tablespoons brown sugar

  • 1 teaspoon mustard


Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.

  • In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined; do not overmix.

  • Scoop a tablespoon of the meat mixture into each mini muffin cup, pressing gently to create a small well in the center.

  • Add a small cube or pinch of shredded cheese into each well, then top with another tablespoon of meat mixture, sealing the cheese inside.

  • In a small bowl, mix ketchup, brown sugar, and mustard to create the glaze. Brush each meatloaf bite with the glaze.

  • Bake for 18–22 minutes or until meat is fully cooked (internal temperature reaches 160°F/71°C).

  • Allow to rest for 5 minutes before removing from the tin. Serve warm.

Notes

  • You can use ground turkey or chicken as a lighter alternative.

  • Mix in diced bell peppers or grated carrots for extra veggies.

  • Store leftovers in an airtight container for up to 3 days; reheat in the oven to maintain crispness.
