Ingredients
-
1 ½ pounds ground beef (80/20)
-
1 cup breadcrumbs (plain or Italian seasoned)
-
½ cup whole milk
-
1 large egg
-
1 medium onion, finely diced
-
2 cloves garlic, minced
-
1 tablespoon Worcestershire sauce
-
1 teaspoon dried Italian seasoning
-
1 teaspoon salt
-
½ teaspoon black pepper
-
1 cup shredded cheddar cheese (or mozzarella)
-
½ cup ketchup (for glaze)
-
2 tablespoons brown sugar
-
1 teaspoon mustard
Instructions
-
Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
-
In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined; do not overmix.
-
Scoop a tablespoon of the meat mixture into each mini muffin cup, pressing gently to create a small well in the center.
-
Add a small cube or pinch of shredded cheese into each well, then top with another tablespoon of meat mixture, sealing the cheese inside.
-
In a small bowl, mix ketchup, brown sugar, and mustard to create the glaze. Brush each meatloaf bite with the glaze.
-
Bake for 18–22 minutes or until meat is fully cooked (internal temperature reaches 160°F/71°C).
-
Allow to rest for 5 minutes before removing from the tin. Serve warm.
Notes
-
You can use ground turkey or chicken as a lighter alternative.
-
Mix in diced bell peppers or grated carrots for extra veggies.
-
Store leftovers in an airtight container for up to 3 days; reheat in the oven to maintain crispness.
