2 boneless, skinless chicken breasts

2 tbsp olive oil, divided

3 cloves garlic, minced

1 tsp dried oregano

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 lb baby potatoes, halved

1 cup cherry tomatoes

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan

Fresh parsley or basil for garnish (optional)
Instructions

Preheat oven to 425°F (220°C). Lightly grease or line a baking dish with parchment paper.

In a small bowl, combine 1 tbsp olive oil with garlic, oregano, paprika, salt, and pepper.

Rub the garlic mixture over both sides of the chicken breasts.

In a separate bowl, toss baby potatoes with the remaining olive oil and a pinch of salt and pepper.

Arrange the seasoned chicken, potatoes, and cherry tomatoes in the baking dish.

Bake uncovered for 25 minutes, then remove and sprinkle mozzarella and Parmesan over the chicken.

Return to the oven and bake for another 5–7 minutes, or until the cheese is melted and golden and the chicken is fully cooked (internal temp 165°F).
