Ingredients
-
4 salmon fillets (about 6 oz each)
-
2 tablespoons Cajun seasoning
-
2 tablespoons olive oil
-
1 tablespoon butter
-
3 garlic cloves, minced
-
1 cup heavy cream
-
½ cup chicken broth
-
½ cup grated Parmesan cheese
-
½ teaspoon smoked paprika
-
½ teaspoon onion powder
-
½ teaspoon red pepper flakes (optional, for extra heat)
-
Salt and black pepper, to taste
-
2 cups baby spinach
-
½ cup sun-dried tomatoes, chopped
-
Fresh parsley, chopped (for garnish)
-
Lemon wedges (for serving)
Instructions
-
Pat salmon fillets dry with a paper towel and season generously with Cajun seasoning, salt, and black pepper.
-
Heat olive oil in a large skillet over medium-high heat. Sear the salmon fillets skin-side down first for about 3–4 minutes per side until golden and nearly cooked through. Remove and set aside.
-
In the same skillet, reduce heat to medium and add butter. Sauté garlic until fragrant, about 1 minute.
-
Pour in chicken broth and scrape up any browned bits from the skillet. Stir in heavy cream, Parmesan cheese, smoked paprika, onion powder, and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.
-
Add sun-dried tomatoes and baby spinach to the sauce. Cook until spinach wilts.
-
Return salmon fillets to the skillet, spoon sauce over the top, and let cook for another 2–3 minutes until salmon is fully cooked and infused with the creamy sauce.
-
Garnish with fresh parsley and serve with lemon wedges.
