Description
A one-pot meal of seasoned rice, tender black beans, and smoky sausage. Hearty, flavorful, and perfect for easy dinners or meal prep.
Ingredients

1 tbsp olive oil

12 oz smoked sausage (andouille or kielbasa), sliced

1 small onion, diced

1 bell pepper, diced
-
1 celery stalk, diced
-
2 cloves garlic, minced
-
1 cup long-grain white rice
-
1 can (15 oz) black beans, drained and rinsed

2¼ cups chicken broth
-
1½ tsp smoked paprika
-
1 tsp cumin
-
1 tsp dried oregano
-
Salt and pepper, to taste

1 bay leaf
-
Optional: hot sauce, lime juice, chopped cilantro
Instructions

In a large skillet or Dutch oven, heat oil and brown sliced sausage. Remove and set aside.

Sauté onion, bell pepper, and celery in remaining fat until soft. Add garlic and cook 1 more minute.

Stir in spices and rice. Toast rice for 2–3 minutes.

Add black beans, broth, bay leaf, and sausage. Stir and bring to a boil.

Reduce heat to low, cover, and simmer 18–20 minutes (or longer for brown rice).

Remove from heat, keep covered 5 minutes. Fluff with fork, remove bay leaf, and serve.

Add corn, tomatoes, or spinach for extra veggies.

Use turkey sausage or plant-based sausage for dietary needs.
