  • 12 oz smoked sausage, sliced

  • 1 tbsp oil

  • 1 onion, chopped

  • 1 bell pepper, diced

  • 3 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1/2 tsp oregano

  • 2 cups chicken broth

  • 1 (15 oz) can black beans, rinsed

  • Salt and pepper to taste

  • Juice of 1 lime

  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a skillet, brown sausage in oil, then remove and set aside.

  2. In the same pan, sauté onion, bell pepper, and garlic until soft.

  3. Add cumin, paprika, oregano, and tomato paste. Stir and cook 1–2 minutes.

  4. Stir in rice and toast 1 minute. Add broth, salt, and pepper.

  5. Bring to a simmer, cover, and cook 15 minutes.
