2 store-bought flatbreads (naan or pita bread work well)

1 clove garlic, minced

2 cups cherry tomatoes, diced

2 tablespoons red onion, finely chopped

Instructions

Preheat oven to 400°F (200°C). Place flatbreads on a baking sheet. Brush with olive oil and sprinkle minced garlic over the top. Bake for 3–4 minutes.

In a bowl, combine diced cherry tomatoes, red onion, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well and let sit for 10 minutes.

Remove flatbreads from the oven, sprinkle mozzarella and Parmesan evenly. Bake for 6–8 minutes until cheese is melted and bubbly.
