Ingredients

Scale
  • 1 tbsp olive oil

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp oregano, ¼ tsp garlic powder, salt & pepper)

  • ⅓ cup water

  • 1 (14 oz) bag tortilla chips

  • 2 cups shredded cheddar cheese (or Mexican cheese blend)

  • ½ cup black beans (optional, drained and rinsed)

  • ½ cup corn kernels (optional, fresh or canned and drained)

  • ¼ cup sliced black olives

  • 1 jalapeño, thinly sliced

  • 2 green onions, sliced

  • 1 medium tomato, diced

  • ¼ cup chopped cilantro

Optional Toppings

  • Sour cream

  • Guacamole

  • Salsa

  • Pickled jalapeños

  • Hot sauce

Instructions

  • Preheat your oven to 375°F (190°C).

  • In a skillet, heat olive oil over medium heat. Add the chopped onion and cook for 2–3 minutes until softened. Add the garlic and cook for another 30 seconds.

  • Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain any excess fat.

  • Stir in the taco seasoning and water. Simmer for 4–5 minutes, stirring occasionally, until the beef is well coated and slightly thickened. Remove from heat.

  • On a large oven-safe platter or baking sheet, spread out half of the tortilla chips in an even layer.

  • Spoon half of the seasoned beef over the chips, then sprinkle on half of the shredded cheese. Add half of the black beans, corn, and olives.

  • Add a second layer of chips and repeat with the remaining beef, cheese, beans, corn, and olives.

  • Bake in the preheated oven for 10–12 minutes, or until the cheese is melted and bubbly.

  • Remove from the oven and immediately top with fresh jalapeño slices, diced tomato, green onions, and chopped cilantro.

  • Serve hot with sides of sour cream, guacamole, salsa, or any toppings of your choice.
