It’s a sizzling skillet of crispy tortilla chips loaded with juicy seasoned ground beef, gooey melted cheese, and all your favorite toppings. Ingredients

1 tbsp olive oil

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp oregano, ¼ tsp garlic powder, salt & pepper)

⅓ cup water
-
1 (14 oz) bag tortilla chips

2 cups shredded cheddar cheese (or Mexican cheese blend)

½ cup black beans (optional, drained and rinsed)
-
½ cup corn kernels (optional, fresh or canned and drained)

¼ cup sliced black olives
-
1 jalapeño, thinly sliced

2 green onions, sliced
-
1 medium tomato, diced
-
¼ cup chopped cilantro

Instructions

Preheat your oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add the chopped onion and cook for 2–3 minutes until softened. Add the garlic and cook for another 30 seconds.

Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Drain any excess fat.

Stir in the taco seasoning and water. Simmer for 4–5 minutes, stirring occasionally, until the beef is well coated and slightly thickened. Remove from heat.

On a large oven-safe platter or baking sheet, spread out half of the tortilla chips in an even layer.

Spoon half of the seasoned beef over the chips, then sprinkle on half of the shredded cheese. Add half of the black beans, corn, and olives.

Add a second layer of chips and repeat with the remaining beef, cheese, beans, corn, and olives.

Bake in the preheated oven for 10–12 minutes, or until the cheese is melted and bubbly.

Remove from the oven and immediately top with fresh jalapeño slices, diced tomato, green onions, and chopped cilantro.
