Instructions
-
Cook the beef: Heat olive oil in a large skillet over medium heat. Add onion and cook for 3–4 minutes until softened. Stir in garlic and bell pepper, cooking for another 2 minutes. Add ground beef and cook until browned, breaking it up with a spoon, about 6–7 minutes.
-
Season the filling: Stir in chili powder, cumin, paprika, oregano, cayenne (if using), and tomato paste. Cook for 1–2 minutes. Add diced tomatoes and simmer for 5–7 minutes until slightly thickened. Season with salt and pepper.
-
Assemble the burritos: Warm the tortillas in a dry skillet or microwave. Place a tortilla on a flat surface. Add a scoop of rice, black beans, beef mixture, shredded cheese, and cilantro. Fold the sides in and roll tightly from the bottom to form a burrito. Repeat with remaining tortillas.
-
Cook (optional): For a crisp finish, place rolled burritos seam-side down in a hot skillet for 1–2 minutes per side until golden.
-
Serve: Serve hot with sour cream, salsa, guacamole, or your favorite toppings.
