Ingredients

  • 2 slices sourdough or whole-grain bread (toasted)
  • 1 ripe avocado (mashed or sliced)
  • 4 slices halloumi cheese
  • Zest of 1 lemon (optional for garnish)
  • A handful of fresh arugula or spinach (optional)

For the Zesty Dressing:

  • 1 tbsp fresh lemon juice
  • A pinch of chili flakes or paprika
  • A pinch of salt and pepper
  • 1/2 tsp honey or maple syrup
  • 1 tsp olive oil

Instructions

  • Toast the bread until golden and crispy. Set aside.
  • Heat a non-stick skillet over medium heat. Sear halloumi slices for 2–3 minutes per side until golden brown and crispy.
  • In a small bowl, whisk together lemon juice, olive oil, chili flakes, honey (or maple syrup), and a pinch of salt and pepper to make the dressing.
  • Spread mashed or sliced avocado over the toasted bread slices.
  • Layer the cooked halloumi on top of the avocado. Add arugula or spinach if desired.
  • Drizzle the zesty dressing over the toast. Sprinkle with lemon zest for garnish.
