- 2 slices sourdough or whole-grain bread (toasted)
- 1 ripe avocado (mashed or sliced)
- 4 slices halloumi cheese
- Zest of 1 lemon (optional for garnish)
- A handful of fresh arugula or spinach (optional)
For the Zesty Dressing:
- 1 tbsp fresh lemon juice
- A pinch of chili flakes or paprika
- A pinch of salt and pepper
- 1/2 tsp honey or maple syrup
- 1 tsp olive oil
Instructions
- Toast the bread until golden and crispy. Set aside.
- Heat a non-stick skillet over medium heat. Sear halloumi slices for 2–3 minutes per side until golden brown and crispy.
- In a small bowl, whisk together lemon juice, olive oil, chili flakes, honey (or maple syrup), and a pinch of salt and pepper to make the dressing.
- Spread mashed or sliced avocado over the toasted bread slices.
- Layer the cooked halloumi on top of the avocado. Add arugula or spinach if desired.
- Drizzle the zesty dressing over the toast. Sprinkle with lemon zest for garnish.
- Serve immediately and enjoy!
